CD is a common (yet often misdiagnosed) genetic intolerance to gluten.
Gluten is a mixture of proteins in wheat, rye and barley. Oats don't have gluten but may be contaminated, so they're forbidden, too.
Triggered by eating gluten, the immune system responds by attaching the gluten molecule, and in so doing, it also attacks your body cells. This is called an autoimmune response. The disease results in damage to the small intestine, which can cause poor absorption of nutrients.
Even the tiniest gluten crumble contains enough of the offending gluten molecule to cause serious trouble and trigger our sensitive immune systems.
And we know how tiny molecules are. And how invisible.
So picture those sticky fingers of family and friends blissfully eating pizza, or dripping sub sandwiches and glazed donuts. Fingers that can easily leave gluten residue on fridge handles, computer key boards, phones...you get the idea. Remember, gluten is a protein– and gluey proteins are next to impossible to eradicate. Because, well, they're sticky. There's a reason that wheat is used in wallpaper paste, adhesives and drywall compound.

One of the most common reasons a product that is technically GF may have trace amounts of gluten is contamination. This can happen in a factory that processes foods that contain gluten. It can occur at the farm, during transportation and milling or on the production line. It can also happen another way. For instance, if you use that jelly or butter for your gluten-infested bread, chances are gluten-infested crumbs will be in your jelly and on your butter.

Lots of info. to take in and process. I can't imagine what you are going through.
What do you do when you go to someone's house that isn't GF?
How long does it take to get the body free of gluten or is this possible?
Is Cameron eating more now that you are GF?

We will have to take food with us for Cameron if we go to someone's house.
It can take up to 6 months for the intestines to be GF.
Cam isn't eating more right now. I think changing his diet so drastically has been hard on his body.

is celiac disease a broad spectrum disease? you know, like, some people can tolerate some gluten, some cannot ever have it, etc. Or is it pretty much all or nothing??? and if it is, how do you figure that out???

The only cure for Celiac is to live Gluten-Free. Always. As in, till the date you meet your maker, always.
There is a blood test for Celiac Disease. Once the blood work comes back, it is highly suggested that you have an intestine biopsy to confirm the blood work.
At this point, we will not have the biopsy done on Cameron. There are lots of factors in that decision.
